All measurements done via eyeball;)
What you will need:
A dozen vine ripe tomatoes
One small bag of multi-colored fingerling potatoes
Handful of fresh basil leaves
One carrot
Spicy olive oil
Water
Spices of choice ( I like black pepper, nutritional yeast, and Trader Joes all purpose seasoning, NO SALT.)
Boil all veggies until v, v soft. Place them in a large soup pot with a handful of fresh basil, a heavy splash of olive oil, spices and a heavy splash of water. Let is alllll simmmmmmmer for a min. Take your hand blender and go to town until a soup like consistency forms. DONE. Lunch for like, a week.
